Gluten intolerance and coeliac disease are diseases of the digestive tract that is affected by the immune system in response to ingestion of gluten, similar to any antigen. And have been increasing in prevalence and notoriety in the last two decades. Both of these conditions are related to the body’s immune response and have varying degrees of symptoms from mild to acute full blown anaphylaxis.
My Own Experience Of Gluten Intolerance
My interest in these conditions, was piqued when I found myself feeling unwell after eating wheat bread. I experienced bloating, abdominal pain and malaise. After eliminating wheat bread from my diet there was a little improvement but I still had some worrying symptoms.
One day I met a lady (who suffered from coeliac disease) when we happened to attend a work related study day together. I noticed that she was not taking any of the sandwiches that were provided for lunch and so I started chatting with her. I introduced myself and asked if she was religious and if she was fasting that day.
The Process of Elimination
So she told me her story of how she suffered from coeliac and can’t have anything that contains gluten. She went on to share her traumatic experience of losing a coeliac support group member to an anaphylaxis reaction to a gluten contaminated product.
Well I told her my symptoms and she advised me to try completely eliminating wheat and gluten from my diet for at least two months to see if my symptoms would improve. And to my surprise, after reading the ingredients lists and allergy advice sections on all my foods and strictly eliminating them from my diet I felt much better, no more belly aches, bloating, tiredness and constipation.
Wheat Has Changed (My Research)
As I tend to love to know, I started reading up on the wheat problems, as I know it to be an ancient grain. I was wondering why it recently started getting so much attention and I was amazed at what I found. In simple terms I found out that wheat has changed from what it was in biblical times.
Also I found out that many people are having even worst diseases and symptoms than those already discussed. From liver failure to respiratory and hay fever like symptoms to ataxia and thyroid dysfunction.

So I have been gluten free for over seven years and those of you using gluten free foods have to admit that it can be very expensive. It took some getting used to, as the bread and baked products taste nothing like wheat based breads, biscuits and pastries. Below is a great place to get your gluten free oats.
